Tomme de Savoie is a variety of Tomme cheese from Savoie in the French Alps, and is usually made from skim milk left over after the cream is used to make butter. As a result, the cheese has a relatively low fat content. The maturing process often takes several months, which gives the cheese a thick rind with a rustic appearance. The taste is soft and fruity, and will depend upon the season and whether the cow's are feeding on winter hay or summer grass.
