Raw sheep's milk cheese from the Pyranees region of Southern France near the border of Spain.  Secret de Compostelle is a staff favorite; it is semi-firm, mild, with subtle sharp earthiness and lanolin notes.  Rich and complex.   Aged 8 months and made with traditional rennet.
