The selection process here for this "jamon" is such that the slaughtered animal must have at least one parent of pure Iberico pedigree. Grain-fed and allowed to live free-range, this "paleta" comes from the shoulder, close to the bone where the finest flavor is found. Cured for 24 months, the ham develops a rich, nutty, flavor with a delicate texture. Pure Heaven.
