This ham is made from the shoulder of the pig (paleta).  Cross-bred between Iberico and Duroc pigs, they are farmed in Southwestern Spain in a free-range environment.  Cures for 24 months, the ham develops a rich, nutty, flavor with aq delicate texture.  Delicious!
