What is a truckle? In the old English Language a Truckle means cylinder shape. Traditionally, Old World Cheddars are formed in truckles.
The cheese ages covered in cheesecloth for a year, during which it is coated with lard to minimize mold penetration. The cloth lets the cheese develop a dry, crumbly texture with a fine peppery aroma and a rich grassy flavour.
