Semi-hard, creamy and sharper than the fresh version. Aged cow's milk cheese has a nutty, medium mild flavor. It's more mellow than many other aged cheeses and has a firm texture. A good choice for cooking, aged Asiago can be shredded or cubed for pasta, soups, or on salads.
